Rice to sushi is like life to a living object. We use short-grain rice, made here in California. For sushi, we use the "Koshihikari" brand. For other rice dishes we use the "Yumegokoch |

We use the best quality seaweed from the inland Sea of Japan. |

Currently, we are using wasabi grown in the Izu region of Japan. Though we are not particular about where the wasabi comes from, we would like to have our guests enjoy real wasabi |
